Summer time Seafood

Who doesn't love seafood in the heat of August. Shrimp are always a perfect Sunday night treat. The weekend is over, and you are dreading going back to work, you don't want to spend hours in the kitchen so lets make something easy yet delicious to end the weekend the right way.

With health food being all the rage, cutting calories and insanity workouts its important to eat something you love but that doesn't have all the calories.



Skinny Girl Shrimp "Scampi" (For Two)


Scampi is simply butter and garlic with some more butter. In order to make this something you can eat, be bikini safe, and not sacrifice flavor enjoy this.

12 Large Shrimp
2 Tbsp Extra Virgin Olive oil
1 Tbsp Dill
1 Tsp cilantro
1 Tsp marojam
1 Tsp fresh parsley
1/2 Tsp lemon vest
1 Tsp lemon juice
1/4 tsp salt
1/8 tsp pepper
1/4 tsp garlic poder
1 tbsp water
1 tbsp flour
1/4 cup feta cheese
10 cherry tomatoes - sliced in half
2 cloves garlic - minced
1 tbsp white onion - diced
1 Tsp I can't believe its not "butter"
1/2 cup uncooked orzo pasta






You can purchase your shrimp pealed and cleaned or you can peal and clean these yourself. To clean your shrimp peel off the shell leaving the tail. Then with a pairing knife under streaming cool water remove both of the veins on the inside and outside of the shrimp. Cut down the middle of the shrimp removing the dark vein.



Once all of your shrimp have been cleaned and de-veined add 1 tbsp of the olive oil, lemon vest, lemon juice, dill, cilantro, marjoram, parsley, salt, pepper, and garlic garlic powder to the shrimp. Let this marinade for 10-15 minutes in the fridge.

While your shrimp is marinating bring a pot of water to boil to cook your orzo. Cook until tender.

Dice up your garlic and onion and begin to sauté in 1 tbsp of olive oil over medium low heat in a large non stick skillet.


Once your onions have become translucent add your "butter" marinaded shrimp with all of the herbs included to the pan.




Continue to sauté the shrimp on medium low heat until they are all pink on both sides about 1 to 2 minutes each side. Add your tomatoes to the pot and let them get warm and soft.




Mix your water and flour in a cup and pour into the center on the pan and turn the heat to high, this will thicken your sauce. This should take 30 seconds to a minute.






Pour your shrimp mixture over the orzo and top with fresh cilantro and crumbled feta cheese. Enjoy your healthier shrimp "scampi".
